Tuna Salad Stuffed Tomatoes – Phase 2 & 3 Recipe
Delicious, fresh and so quick and easy to make!
100g canned tuna drained
1 tablespoon minced red onion (Daily Allowance)
1 1/2 tablespoon fat free plain yogurt
1/2 teaspoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1 medium round tomato (Daily Allowance)
1 teaspoon freshly chopped chives
1 tablespoon chopped celery
1 tablespoon peeled and chopped cucumber
Place tuna in a bowl with celery, cucumber, and red onion. Stir to combine.
In a small bowl, whisk together yogurt, lemon juice, salt and pepper.
Add dressing to tuna mixture. Stir to combine.
Remove the core of the tomato and gently scooping out the seeds inside. Carefully stuff the tomato with about 1/3 cup of tuna salad. Sprinkle the freshly chopped chives on top of the tomato.
Make a double batch of to eat throughout the week.
