Chicken Meatballs
Healthy HCG Friendly Chicken Meatballs for Phase 2 of the HCG Protocol.
Ingredients
In a food processor add:
• 2 chicken breasts (medium sized)
• Onion
• 1 Tpsn garlic
• 1 Tbsp coconut oil
• Fresh basil
• Rosemary
• Fresh parsley
• Thyme
Directions
Whizz up everything for a minute until it looks like a paste, scoop out spoons
of mixture and roll into balls, place in a ceramic oven proof dish and cook in the
oven at 180 degrees for about 30 mins, check on the meatballs every so often and
pour a small amount of sodium free homemade chicken stock into the dish to keep
the meat balls moist, turn the meatball half way to ensure they brown all over.
To spice it up add a good dash of cayenne pepper and squeeze lemon juice over
while cooking.
