Lemon Mustard Chicken

Delicious Lemon Mustard Chicken suitable for Phase 2 and Phase 3


140g boneless skinless chicken breast
1/2 lemon juiced
1 teaspoon lemon zest
1 tablespoon dijon mustard
1/2 tablespoon dried chives
1/4 teaspoon salt
1/4 teaspoon pepper
roughly chopped spinach
1/4 teaspoon salt
1/8 teaspoon garlic powder


Whisk together the lemon juice, lemon zest, Dijon mustard, chives, salt and pepper and marinate the chicken (in the fridge) for 1-2 hours (in a plastic bag or a shallow dish).
Grill for 5-7 minutes per side. Sauté the spinach over medium-high heat for 2-3 minutes, until softened.
Season with salt and garlic powder.
Serve hot.
