Turkey Meatballs with Steamed Green Beans

This recipe makes 4 servings.


1 pd extra lean ground turkey preferable breast only meat
1 small onion
2 tbsp fresh parsley
1/2 cup grated parmesan cheese
2 cloves garlic
1/2 of a green bell pepper
1/4 tsp sea salt
1/4 tsp cracked black pepper
2 cups fresh raw green beans


Start to make this recipe by chopping the onion and green bell pepper. Place in medium sized bowl. Next, mince garlic and parsley. Then add into the bowl of pre-chopped onions and peppers. Then add turkey meat, parmesan cheese, salt and pepper to the bowl. Mix together, we’ve found it’s easiest to do with your hands.

Once all of the ingredients are mixed together well, it’s time to make the meatballs. Roll smalls portions of meat mixture into 1 inch balls. Roll together tightly to avoid falling apart during the cooking process.

Place the meat balls on a wire cooking rack over a cookie sheet. (tip: line the cookie sheet with aluminum foil for easy clean-up). Bake the meatballs at 375 degrees for about 20-25 mins. depending on the size of the meat balls. Always cut one of the meatballs in half to check for doneness. Once done, remove from oven and let cool for 5 minutes before serving.

To make the steamed green beans, simply slice off the rough ends. Place all of the green beans in a large shallow skillet with about 1 cup of water, just enough to cover the green beans. Cover with lid and heat over high heat until green beans are cooked until your desired doneness.
