Phase 3 Maintenance Egg Cups Recipes
A great simple, tasty and easy to prepare breakfast for those of you on the maintenance phase.
1 handful fresh spinach, torn or cut into small pieces
8-10 slices bacon, cooked and crumbled
1 cup cheese, shredded
¼ cup water
1 tbsp Dijon mustard
1 tsp hot sauce
salt (to taste)
pepper (to taste)
Preheat oven to 180 degrees celcius.
In a greased cupcake tin divide spinach, bacon, and cheese between the 12 cups.
In a bowl whisk eggs, water, Dijon, hot sauce, salt, and pepper. Ladle egg mixture into each cup. Fill within ¼-inch from top.
Stir each cup with a fork just to make sure filling is coated with egg mixture.
Bake for 30-40 minutes or until edges start to pull away.
If you don’t have bacon, crumbled breakfast sausage or diced ham would work. If you don’t have spinach, you can use chopped up cooked broccoli or asparagus. It would also be great with bell peppers, onion, or tomato, too.
