Tuna Stuffed Tomato – Phase 2

Ingredients

  • 1 x can tuna in spring water (drained)
  • One large tomato
  • 2 x spring onions (chopped)
  • 40g mozzarella cheese (grated)
  • Salt & pepper to taste
  • Tabasco (optional)

Directions

  • Preheat oven to 180 degrees.
  • Cut a thin slice off the top of the tomato, and gently scoop out pulp and seeds, leaving a 1 ½ cm wall.
  • Mix the tuna & spring onions, add salt & pepper to taste & a few drops of Tabasco if you desire.
  • Scoop the mixture into the tomato with a spoon & top with mozzarella. Bake in the oven for 25 minutes.
