Tuna Stuffed Tomato – Phase 2


1 x can tuna in spring water (drained)
1 large tomato
2 x spring onions (chopped)
40g mozzarella cheese (grated)
Salt & pepper to taste
Tabasco (optional)


Preheat oven to 180 degrees.
Cut a thin slice off the top of the tomato, and gently scoop out pulp and seeds, leaving a 1 ½ cm wall.
Mix together the tuna & spring onions, add salt & pepper to taste & a few drops of Tabasco if you desire.
Scoop the mixture into the tomato with a spoon & top with mozzarella. Bake in the oven for 25 minutes.
