This delicious healthy chicken soup is a must for busy people. It can be frozen too!
Ingredients
This recipe makes eight servings
- One tablespoon of Coconut Oil
- One medium onion chopped
- Two celery stalks
- Two cloves of Garlic
- 1 Tablespoon Curry Powder
- 8 cups of chicken broth
- 1 Bay Leaf
- 3 cups of diced chicken
- 1/4 teaspoon red pepper
- 1/2 teaspoon of Thyme
- One teaspoon of Lemon Juice
Directions
- Prep time: 1 Hour
- Add coconut oil, onion, celery, and diced chicken in a large saucepan and cook for 5 minutes.
- Stir in Curry Powder and garlic and cook again for 2 minutes.
- Add Chicken Broth, bay leaf, pepper, thyme and lemon juice and stir well.
- Finally, remove the bay leaf and serve.
