Healthy Chicken Soup

This delicious healthy chicken soup is a must for busy people. It can be frozen too!

Ingredients

This recipe makes eight servings

  • One tablespoon of Coconut Oil
  • One medium onion chopped
  • Two celery stalks
  • Two cloves of Garlic
  • 1 Tablespoon Curry Powder
  • 8 cups of chicken broth
  • 1 Bay Leaf
  • 3 cups of diced chicken
  • 1/4 teaspoon red pepper
  • 1/2 teaspoon of Thyme
  • One teaspoon of Lemon Juice

Directions

  • Prep time: 1 Hour
  • Add coconut oil, onion, celery, and diced chicken in a large saucepan and cook for 5 minutes.
  • Stir in Curry Powder and garlic and cook again for 2 minutes.
  • Add Chicken Broth, bay leaf, pepper, thyme and lemon juice and stir well.
  • Finally, remove the bay leaf and serve.
