Healthy Chicken Soup

This delicious healthy chicken soup is a must for busy people. It can be frozen too!


This recipe makes 8 servings

1 tablespoon Coconut Oil
1 medium onion chopped
2 celery stalks
2 cloves of Garlic
1 Tablespoon Curry Powder
8 cups of chicken broth
1 Bay Leaf
3 cups of diced chicken
1/4 teaspoon red pepper
1/2 teaspoon of Thyme
1 teaspoon of Lemon Juice


Prep time: 1 Hour

In a large saucepan, add coconut oil, onion celery, diced chicken and cook for 5 minutes.
Stir in Curry Powder and garlic and cook again for 2 minutes.
Add Chicken Broth, bay leaf, pepper, thyme and lemon juice and stir well.
Finally remove bay leaf and serve.
